These are a perfect little treat to keep in the freezer to ward off the 3.30-itis sugar craving.

Snack, Dessert: Vegan, vegetarian, paleo, gluten free

Makes 10:


– 170 grams of cashews
– 5 medjool dates
– 1 tablespoon of coconut protein powder
– zest of one lemon
– juice of half a lemon
– 2 tablespoons of coconut milk
– 1 teaspoon of ground ginger


  1. Place all ingredients into a food processor and process till all combined
  2. Roll into small balls and roll in desiccated coconut

Store in fridge or freezer.
