Makes 10:
Ingredients:
– 170 grams of cashews
– 5 medjool dates
– 1 tablespoon of coconut protein powder
– zest of one lemon
– juice of half a lemon
– 2 tablespoons of coconut milk
– 1 teaspoon of ground ginger
Method:
- Place all ingredients into a food processor and process till all combined
- Roll into small balls and roll in desiccated coconut
Store in fridge or freezer.
