Benefits of pumpkin:
Pumpkin contains many anti-oxidant vitamins such as vitamin-A, vitamin-C and vitamin-E. It is also rich source of minerals like copper, calcium, potassium and phosphorus.
Ingredients for burger patties: 
- 300g pumpkin (skin off) grated
- 2 carrots grated
- 2 clove crushed garlic
- 1Tbsp nutritional yeast
- 1Tbsp dried oregano
- 1 400g can cannellini beans (rinsed and drained)
- 2Tbsp wholemeal or gluten free flour
Ingredients for avocado sauce:
- 1 large avocado
- 4Tbsp coconut yoghurt
- ½ a clove crushed garlic
- Juice of 1 lime
Method for burger patties:
- Using a food processor shred the pumpkin and carrot (this saves your hands from grating)
- Remove from food processor and place in a large mixing bowl.
- Add garlic, nutritional yeast, oregano, cannellini beans, flour and mash together with your hands.
- Shape into patties.
- Place on baking paper and cook for approx. 40mins at 180 degrees
Method for avocado sauce:
- Smash the avocado with a
fork.
- Crush garlic and add to mixture.
- Add the coconut yoghurt and juice of a lime and mix together
Enjoy on light rye sourdough or gluten free bread.
